Because they are creatures of the Long Night. It makes no matter what season it is, imo, when the Long Night approaches, an edge to the darkness sharpens, and they can move in that darkness.
They go dormant at dawn, hence the danger when the sun hides its face for years at a time, and the extended "sleep" when dawns arrive normally.

No idea why it's only Jon's friends by the fire, but I think "touched by walkers" is the show's take on winterization. Rather than the "cold" being the real enemy (as Gared said...which, notably, the show cut out), the show has made white walkers into an enemy that winterizes people with "a touch".
