I can't just dismiss Mel's comment about that bag of fingerbones (I mean, is there even a second bag like that on Planetos?), but there seems to be no way she has already used the bag to pose someone else as Davos. Perhaps she has it in her possession and plans to use it sometime later.
Or perhaps she just saw the bag often and quietly made a note to herself "hmm, what a nice item for a glamor", but she never actually had it.
Do we know what happened to Jaime's hand? I never got why they cut his hand, it was so out of place. But maybe it was used for some magic.
Vargo Hoat cut off Jaime's hand because, first, he enjoyed cutting off people's hands and feet (he must have been thrilled at the idea of so incapacitating such a famous warrior), and second, to reduce Roose Bolton's chances to successfully negotiate with Tywin Lannister, as the Leech Lord himself explained to Jaime during their dinner with Brienne. It just would be more complicated to strike a deal with Tywin by delivering him his son short a hand, than by delivering him whole, that's why Roose specifically asked Jaime not to put the blame on him before his father. The Brave Companions had previously betrayed Tywin, so it's not exactly in Vargo's best interests that his current employer makes friends with his former one. Hoat would then have no value to either of them (except for Tywin's revenge, of course), so complicating the alliance would seem beneficial to him.

Or Roose himself: he seems fond of creepy stuff, like leeches and burning of old books. Maybe Qyburn did something with the hand for Roose? The hand had rotten pretty badly by the time Jaime got to Harrenhal, I believe they spent several days getting there, so it probably was unsuitable for reattachment. The stump was in bad condition as well: Qyburn initially wanted to remove the whole arm. The bones of the hand, however, might have some magical value.
LOL, I remembered a similar discussion on reddit, where someone brought up Robert Strong and the mysterious contents of his helmet, and also that Qyburn probably had Jaime's hand, and there was a comment like "What, there's a hand inside the helmet???" Would be hilarious, UnGregor rushing into battle with a rude gesture in place of the head.

You mean Melisandre has Davos' fingerbones? Definitely would be useful for her, but how? It seems unlikely she managed to retrieve them after he lost them on the Blackwater. And he didn't seem to ever part with his bag, so I doubt she could switch it with another bag.

I have no idea what to do with this--but in a strictly hypothetical sense, the idea that Mel could swap the bones in his sleep. . . I could buy that. We've got baby swaps and identity swaps.
