A friend of mine who's into Myers-Briggs typeology had this to say about "typing" GRRM:
Stupid INFP writer. He’s an official INFP writer and while i don’t know if he’s on record as identifying as one the [M-B] community at large does. Tolkien and CS Lewis are too. They usually focus on world building narratives. They’re great with words and details and have to fall in love with the content. They have to be in the mood and don’t really do well as writer for hire or under pressure. They may not complete their work due to not feeling things. At least officially complete it but when they die they’ll have so many notes that may be famous works in their own right because the INFPs notes are usually very polished. Far too abstract but beautifully written.
