Theon is such an obedient ward to Ned. You can see it in many small ways throughout the episode, the way he waits on Ned, but here he clearly says that he takes all orders from Ned.
Also, it's weird they see the stag and wolf on the way back, and not on the way to the beheading. Both are crawling with insects and look slightly rotten, so they have been there for some time.

The book makes it so that they only find the direwolf--the stag is not to be found. And the stag in the show in all actuality is a dead stag that they came across while filming and they took advantage of it (so those reactions to the smell are genuine).
Likely the film crew would explain the stag as simply as "they were coming a slightly different way back home" or some such other nonsense.
Theon really struggles to make an impression on his own in these early episodes. Not that Alfie Allen is a bad choice by any means, but I do wonder how the impression might have been different if Theon had been portrayed by the extremely handsome type that GRRM describes. Still, I like the fact that Alfie Allen isn't completely drop dead handsome, it makes Theon's inability to be taken seriously in Winterfell really come to mind in later seasons, and help with his character motivations.
