One thing that really makes the opening scene with Tywin really work is that Tywin is actively doing something. A common mistake when writing dialogue is to write your characters just sitting and talking to one another. Later seasons make this mistake (I'm wondering if this is due to the show runners having others write those scripts), but here in Season One that mistake is avoided in most cases (though not all--the Cersei/Ned scene from "The Lion and the Wolf" springs to mind for instance). Usually you need larger than life personalities to carry just two characters talking to one another--and even then they need to be doing something in addition to just talking to one another.
Here though, thank god someone ran over that stag and someone taught Charles Dance how to skin it, because quite literally that makes the scene go from being a rather mediocre talking scene to a wonderful scene to watch.
Dumb luck, but a great example of how giving your characters something to physically DO as they talk can make all the difference.
